To my knowledge, the gyroscope feature of the iphone 4, ipod touch 4, and ipad 2 have not been implemented into unity. In order to get this function you must buy a plug in from a different site. If you were able to create an app with the gyroscope function successfully, I would assume it would be possible to use unity remote with this function. If it can stream accelerometer data, I am sure it would be able to stream gyroscope data as well.

to be honest, I have no idea. I would contact unity to see if they have any ideas. Anyway, I doubt it would be very easy at all because you would need to somehow edit the unity remote app to get it to stream gyroscopic data. However, if you can figure it out, be sure to post back and tell us how you did it. I would be very interested in finding out.
Input.Gyro is the thing to use if you want to check the status, but as far as I can make it, it isnt transfered as input through UnityRemote App so you will have to build and run on the device to test Gyro. Rather annoying.
