Programming for a boss

I will admit I'm not that great at programming and tend to struggle working out how to do things without help but i guess everyone starts off like that but the one thing that i always wonder how programmers do is boss fights as they seem to have all this advanced coding and I have no idea how it's done.

An example is simply a boss flying around the level looking at the player for a certain amount of time and then switching into a new state that makes it charge at the player. And yes i know about states.

Though if i was programming this then i would have no idea where to start. Like how would i make the boss fly around the level randomly while still looking at the player and then lets say it charges and when it hits the ground, it goes back to flying around.

How would i do that if anyone can help?
