Unused Sprites on Shared Atlas
So I have recently done a UI overhaul and now have a much slimmer UI with less sprites. However, I haven't yet removed the old sprites from UI sprite packer tag.
Even if the sprites are unused, are they still being packed into an atlas when the application is built? On an atlas with both unused sprites and used sprites, is the entire atlas being used or only one with the used assets?

Yes regretfully the sprites are added. I did not find out how to not include them. We have a big project and we simply can not afford to remove packing tags. Too much work. We simply need the same as you do. Remove unused sprites from atlas. (not packing them even if their packing tag is set)
